Bacon Wrapped Chicken Tenders

Hubs LOVES him some bacon.  I mean if it would be socially acceptable, he'd buy me bacon-scented perfume...

And, because I love me some Hubs, I try to throw bacon at him as often as I can to keep him happy.

These were definitely a hit and were so very easy.  We served them with grilled sweet potatoes for a quick weeknight meal.

Don't be afraid to use bacon...and I mean, REAL bacon, not that turkey bacon stuff.  Real bacon, in moderation, is OKAY, people!  Bacon.  Is.  Good.

1 package chicken breast tenders
2 tsp grill seasoning - I used McCormick's Smokehouse Maple; you could also use your favorite BBQ sauce
8 slices bacon

Preheat grill on med/high heat.
Season chicken with grill seasoning.

Wrap one slice of bacon onto each tender.  I also sprinkled some more seasoning on, but that's just preference.

Grill the chicken for about 2-3 minutes on each side - long enough to brown the bacon; the chicken will cook quickly.

Wasn't that SOOOO easy???  Three ingredients!

Roasted Chicken Salad with Cranberries

I have all of this beautiful lettuce in my garden this year and I just can’t seem to keep up with it!  It's so crisp, fresh and clean - I love it!  The taste is so much fresher than lettuce I buy in the store.  I'm eating it as soon as I cut it.  The great thing about lettuce is that it grows, you cut it to eat, and then it grows right back.  I won't have to buy lettuce this summer at all!  We’ve been making a lot of lettuce wraps and having tons of salad so that it doesn’t go to waste.

Last week we also had leftover rotisserie chicken so I decided that I’d make a healthy version of chicken salad.  Hope you like it!

3oz of leftover rotisserie chicken
2T plain Greek yogurt like Fage 2%
2T chopped dried cranberries
1T chopped walnuts
2tsp honey mustard
Lettuce leaves for wrapping
Salt & pepper, to taste.

To a small mixing bowl (or measuring cup like me, haha), add chicken, cranberries and walnuts.

In a separate bowl, mix together yogurt, and honey mustard.

Add the yogurt to the chicken mixture and stir thoroughly.

If you have time, let the mix sit overnight or for at least a few hours to “marinate”.

When ready, serve on lettuce leaves and season with salt & pepper – such a light and healthy lunch!

Monterey Chicken

Have you guys ever had the Monterey Chicken at Chili's restaurant?  Chicken, cheese, bacon, BBQ sauce, side of mashed potatoes with gravy...mmmmmmmmmmm...oh, and broccoli...gotta have a healthy (albeit butter-slathered) side dish to make it colorful, right?

Have you ever looked at the calories for the Monterey Chicken at Chili's restaurant?  About 890 calories for the meal.

Holy moley.  Now, in comparison to SOME meals you can get at pretty much most of the chain restaurants, this one is probably at the low end of high...you get me?  But still...do I want to waste 1/2 of my daily calories on one meal?  Uh, Hells to the No.

SOoooo, I set out to redeem this little guy so he's not feeling so unloved after I shared his unhealthy dirty little secret...oh, sure, you disguise yourself as a relatively healthy option like chicken, but I'm onto you, Mr.

I have to say, I feel like I did him justice.  AND, I was able to find another reason to add roasted cherry tomatoes to a dish...man, I'm digging these things!

2 - boneless skinless chicken breast
3tsp McCormick Grillmates Smokehouse Maple Seasoning (or another seasoning of your choice)
2 T of your favorite BBQ sauce (I used Sticky Fingers Memphis)
1/2 cup shredded reduced fat cheddar or colby jack cheese
1 cup roasted cherry tomatoes - homemade, check out the link above!
2 T Real Oscar Meyer Uncured Bacon Bits

Preheat your grill or grill pan to med/high.

Season both sides of the chicken with seasoning.

When grill is ready, place the seasoned chicken on and grill for about 7 minutes.  Before flipping, pour some BBQ sauce on top, then flip for an additional 6-7 minutes or internal temp reaches 165 degrees.

When chicken is almost done, pour BBQ sauce on the top again.

Sprinkle the Bacon Bits on top of each breast.

Then add the cheese and roasted tomatoes and let the cheese melt.

Remove from grill and gobble it up!

This version saves so many more calories!

Roasted Cherry Tomatoes

It's gardening season!!  Do you have a garden?  What are you growing??

Right now, I have the most delicious lettuce coming in and my tomato plants are filled with those little beautiful yellow flowers of promise and I couldn't be more excited.  A few years ago I ventured into my first attempt at gardening and I planted 15 tomato plants...and they all gave me the best harvest, but um, that's A LOT of 'maters, people.  This year, I got smart and I only planted two!  Still, I plan to get tons of tomatoes and hope to share lots of tomato recipes this summer!

The first recipe I want to share with you is this little gem below.  Recently, my local grocery store had a BOGO on cherry tomatoes and even though Hubs doesn't eat them (I know; a freak, right??), I wasn't going to let this opportunity slip by because I knew I could come up with something to use them for.  THEN, I remembered that my Bestie & I had some delicious roasted tomatoes on our Girls Weekend a few weeks ago.  I couldn't get over how yummy they were and she told me how easy they were to make...my Bestie is really smart so I try to do what she says.  So, Roasted Cherry Tomatoes it was!

You all know how healthy tomatoes are but if you haven't done your homework on these beauts, let me quickly fill you in: 

  • They have been found to ward off certain cancers like stomach and lung
  • They are high in vitamins A & C and could prevent DNA damage & age-related diseases like diabetes and atherosclerosis
  • They are also great sources of folate and B6 which can help to reduce heart disease

Not to mention how versatile they are for recipes!

3-4 pints of cherry tomatoes (really any kind of tomato will work)
4-5 cloves of garlic, unpeeled
2T fresh thyme leaves
2-3 springs of fresh rosemary, roughly chopped
Olive Oil spray like Misto
Salt & Pepper, to taste

This is one of those recipes where you can set it and forget it.  It takes no time to get the ingredients going; a great lazy Sunday recipe.  You're going to want to roast these low and slow...like a good BBQ...mmmm BBQ...

Preheat your oven to 250.

Spray a baking sheet with nonstick spray and set aside.

Cut your tomatoes in half and then spread them out onto the baking sheet.  Doesn't have to be pretty, just spread them out.  Throw your garlic cloves in there, too.

Now spray the tops of them with your olive oil spray and sprinkle the thyme leaves, rosemary & sprigs, salt and pepper over the tomatoes.

Place them in the oven and let them roast for a good 3 hours.  You're going to want them to get shrively and dried.

Once they are done, remove them from the oven and enjoy!

You can freeze these for later use (up to 3 months), or just pop them into a baggie into your fridge and enjoy them throughout the week.  I have thrown them into my eggs for breakfast, my veggies for dinner - any way I can use them, I do!
